As of January 1st, we banned cream of mushroom soup (and ALL canned soups) from our house for a month. It was part of our exercise program to eat healthy and those canned soups are a big no-no. We wanted to continue the trend to try to stay away from the extra salt and fat from the soups. I had two "cream of" replacements on pinterest. I tried this one and it worked well. Now, I don't know if its officially healthier, but at least its more natural cause its homemade and doesn't have preservatives and stuff in it. But it does have a fair bit of butter....theres another one I want to try too. Maybe I'll do that one next.
So for one can of whatever soup (I doubled this)
3 tbsp. butter/marg
3 tbsp. flour
salt and pepper
1 1/4c. liquid-milk or stock (I used chicken broth)
Melt the butter in sauce pan. Add flour and spices. Mix until thick and bubbly. Whisk in liquid. Cook until thickened and lump-free.
I then added 3/4c. milk and added it to my cooked ground turkey and poured it over a 9x13 pan filled with a bag of tater tots. Cook for 35-50 mins till hot and cooked through.
With the ground turkey instead of beef and the homemade sauce, it felt much healthier....everyone loved it like normal and I would personally say I liked this sauce BETTER than cream of mushroom soup.
