What I'm totally into right now....

I bought this book a couple weeks ago at Indigo. I had seen Jessica on Oprah a while back and the recipes and concept sounded interesting. What she does is use vegetable purees in her cooking to get her kids to eat veggies. Kennedy will eat some veg, Brian doesn't eat much vegetables at all (besides potatoes- which don't even count) and although I do eat pretty good, who couldn't use more veggies?? So I have tried the homemade mac and cheese with cauliflower, the grilled cheese with Butternut Squash and tuna salad pitas with cauliflower. They were all delicious except the grilled cheese Brian didn't really like. With ketchup, I couldn't tell and Kennedy ate it all! I have banana bread in the oven right now with cauliflower and tonight I am going to make homemade mozza sticks and chicken fingers with broccoli and have an appetizer night with salad. FUn, huh? We love apps around here. So, this book is fantastic. Brian loved the mac and cheese and had no idea there was veggie puree in there. (I don't tell him there is anything in it until after he finishes it). I have turned into a health nut lately, and I have been eating fruits and veggies with every meal and Brian seems to ask a lot- Ok, whats hidden in this?

As an important note, Jessica says she always has fresh/cooked veggies at the table too so the kids get used to eating them. But if they have one broccoli, its ok in your head cause they are still getting their nutrients. 

The book has tons of easy recipes, and what I really love is all the ingredients you would typically have at home anyway....no weird stuff that I use once and never know what to do with again! She has breakfasts, dinners/lunch, snacks and dessert! She does brownies with spinach that I want to try and chocolate chip cookies with chickpeas. 
(BTW- that price on there, I don't think its a sale. The back sticker says the same thing.  I don't think I got a deal.)

So also, a long time ago, I got this food chopper from Pampered Chef that dices veggies and nuts and stuff. Its fantastic. If you have a baby- GET THIS!!! Kennedy could eat everything we were eating when she was really little because I could chop it up fine. I also would hide carrots and broccoli in spagetti sauce using this chopper. It definetly is wonderful.

So, we are off to go swimming later (and eat some yummy banana bread- I'll let you know how it went)

Oh that sounds EXCELLENT! All those recipes sounds Divine too! Can you share a couple of them on your blog? I should get the book maybe, eh? : D

When I go to Costco, I always buy fresh zucchini (although, I apparently can't spell it!) and puree them right away. I put them in 1/2cup baggies in the freezer. Whenever I make banana muffins (with whole wheat flour and apple sauce instead of butter) I add a baggie. Makes them moister and no one is the wiser.

Jill has that book, because her brian doesn't eat veggies either. so funny. my kids are pretty good about them, but yah, more is never a bad thing. I should check it out!

So you asked about my black background--yeah, it is black drapey fabric that I bought a bunch of at Wal-Mart when it was on their dollar/yd table. Works like a charm (especially when you can darken the shadows in Picasa).
