So, a week or so ago, I borrowed my mom's camera because it is an SLR and it takes pics so fast. With my camera, my the time it takes the shot, the subject (Kennedy) has moved. Its a good camera, just a bit slow. So anyway, the other day, I was taking my second big batch of photos and after about 30 or so really cute ones (it doesn't take long to add up!) I looked down at the display and it said, "NO MEMORY CARD". Ahhhh. i was so upset. I had left it in the computer from uploading last time and forgot to put it back in. So i quickly put it in and tried to take more, by that time, she was not in the mood and all my tricks to make her smile were no longer helpful after she'd just seen them. So, I did manage to get a few- because I put her in our big jacuzzi tub that she likes to play in. so, at least I got a few!
So, the banana bread I made the other day with cauliflower was not good. It was pretty grose. Kennedy ate it, but shes not that picky. I would try it again, but next time I would use MORE bananas cause it was very bland. The chicken fingers and mozza sticks (using broccoli and cauliflower) were very good- just very difficult to make. I couldn't get the mozza sticks all covered in bread crumbs or to stay in cylinder. yummy- but not pretty once they all fell apart. I will definetly make those 2 again to try to do it better now that I know the general concept.
I made banana muffins today, and I will share the recipe with you

Banana muffins
3 large bananas
3/4c. sugar
1 egg, slightly beaten
1 tsp baking soda & powder
1/2 tsp. salt
1 1/2c. flour
1/3c. melted butter**
Mash bananas, add sugar and slightly beaten egg. Add butter. Add dry ingredients.
Bake @ 375 20 mins.
Original recipe is from Kaylani, but I made some tweeks. I changed the melted butter to unsweetened applesauce and I had some splenda in the cupboard that was a trial that we got with a new appliance. So I used that. The applesauce is a direct exchange (exact measurement). It worked really well. I doubled the recipe and made mini muffins instead. for the last 2 dozen, I added chocolate chips and coconut. yummy either way.
If you double this, it will make 8 dozen mini muffins. you also cook the mini ones for less time. about 10 mins. (I cooked mine at 350 for 12 mins).
