It is time...

for me to share my FAVOURITE pancake recipe. I love pancakes! yummy! and my favourite way to eat them is with butter and brown sugar sprinkled on top. That goes way way back for me. My childhood friend, Kyle, showed that to me and i've never gone back! Also, I hate skinny, floppy pancakes. they have to be thick, fluffy and stirdy...no floppin around. This recipe I have does just that and its great because it only uses one bowl and its incredibly easy to make. So, here it is:

Jessica's tasty pancakes

2 eggs, beaten
1 c. milk
2 Tbsp. oil


1 1/4 c. flour
1 Tbsp. sugar
1 Tbsp. baking powder
1/4 tsp. salt


Beat egg till smooth and bubbly. Add milk and oil. mix. add all other ingredients.


no beaters or kitchen aid is required. just old fashioned bowl and whisk.

I add frozen blueberries if I have them because Kennedy LOVES blueberries and sometimes that extra zing is just right. But plain is great too. You should make them.


So, Kennedy's been in her glory playing outside. We've been having some great days out in the backyard. I got this little kiddie pool and even though it has no water, its great to play in! Kinda handy that it provides shade too! and this is her eating blueberries which she loves but must immedieatly go into the tub after eating them and still, i can't get all the purple out of her hands!

that is one fun pool and you have more than 2 readers! we are just slackers at the commenting. Kennedy is getting so big and Adorable! i love summer too. hopefully we will see each other sometime...in the warmth of the sun. happy blueberry eating.

Oh yay! Love the recipe. Gotta try that this weekend for sure. Love that little shade thing of hers. She is so cute in her sun hat.
