tasty and healthy....REALLY!

So, Brian and I started a new workout and eating plan (more on that later) and so for supper today, I made a little something different but easy and it turned out SOOOO GOOD! Brian and I both loved it and it will now always be a staple even when we aren't on a "diet".

So, its rather basic, so don't laugh that I'm sharing this.

Dice up some chicken. Mine was only slightly defrosted. Put in large skillet with water. Let it cook as the water dissolves, but don't let it go completely away. When the chicken is close to done, add thinly sliced red, yellow and/or orange peppers (I never buy green- yuck!), diced mushrooms,shrimp and your fav spices. Make sure there is still water in the pan and cover to steam the veggies. When everything is all tender and cooked, its done! Put some on a multigrain tortilla with a bit of grated cheese, fat free sour cream and here's the really important part.....a really good spicy sauce. We used a sweet red chili sauce.






I know my brother in law loves this sauce as does Brian and it would probably work. It just needs to add some kick and flavour.


There you go, serve with some more veggies or a salad and you have yourself a balanced, nutritious and DELICIOUS dinner! Enjoy!
